Nitrate is the main source of nitrogen for most plants. Nitrogen is essential for plant growth and is therefore used as fertilizer in agriculture.
Over-fertilization means that nitrate cannot be fully absorbed by the plant and thus enters the soil and groundwater.
Nitrate itself is not particularly dangerous for humans. However, it is converted in the intestines into nitrite and nitrosamines, which are many times more toxic.
The binding of nitrite instead of oxygen to hemoglobin (red blood cells) leads to an oxygen deficiency in the body.
Even a level of 5 mg/l of nitrate in drinking water is carcinogenic.
